On an episode of "Unwrapped," I saw a commercial Buche de Noel made with layers in a mold! They had a large diameter PVC pipe split lengthwise for the mold, then started with a narrow strip of cake down the center, then layers of caramel and ganache, wider strip of cake, etc. Turned out on a tray, frosted with chocolate glaze, dusted with powdered sugar, decorated with meringue mushrooms and bits of evergreen, and dusted with more sugar.

Did you see Battle Carrots today? That was pretty neat. The challenger scored higher in taste but Cat Cora came thorugh with plating and won!

No, they put the flat side down for stability.
Yes, I saw Battle Carrot. I suspect Cat Cora could beat almost anyone at plating. |
