We used his brine from that recipe, slightly altered, and it was a darn good turkey.

We recruited the great-niece's boyfriend to do the heavy lifting. Other than that, it was Phil giving instructions and whatever prep someone with severe cataracts could safely do, and me doing everything else!

Right. The trick is to use your chainsaw to take off the top of the range so that you can lower the turkey in.

Then we "mig" weld the top back on, crank it up to eleven, and cook up a storm.
That is one of the things we kind of miss out on here. All those traditional northern hemisphere feasts are pretty much a bother here, Christmas, with our summer heat, cold cuts and salads are the go. We don't need to roast ourselves for the holidays, the country does that for us. Last wek of spring and the met boys released the figures. Hottest and dryest winter and spring for over 25 years. The first day of summer put the thermometer over the old century mark on Friday. And we have 4 or 5 months of this to go yet. My poor fruit orchard. |

I know half of what you mean, Shorty. We have a subtropical climate up here on the coast of the Gulf of Mexico and Christmas is usually quite warm. The last time I saw a white Christmas was when we were visiting my folks in Illinois.

Mother nature beat us to it. The Mallee is limestone country. Sheet rock in over lapping plates that can be hundreds of feet thick. All of it, the compressed coral, of an ancient shallow sea. Covered in places by only inches of sand. |

OOH! Giant siblings of my pet rock!
Yes, I had a pet rock. Found it in the gravel driveway. It was fossilized pipe organ coral worn smooth by running water, then cracked open to show the "pipes." Might still be here somewhere... |
